Badam barfi

Badam barfi
1)1 cup badam soaked in hot water 30 min 
2)1 cup milk 
3)Sugar-1/2 cup 
4)Ghee- 3 to 4 spoon 
5)1 Drop rose essence 
Method 
Grind badam milk and sugar , take a pan add ghee then add badam mix , rose essence mix nicely till dough then pour to greased plate and roll then cut and let it cool then store

Beetroot halwa

Ingredients 
Beetroot -3 to 4(peeled and grated ) 
Sugar -1/2 cup( according to ur taste )
Ghee -1/4 cup( or little less )
Cardamon powder -1/4 spoon
Milk -1/2 cup 
Dry fruits 
Method 
Fry beetroot with ghee till raw smell goes ( 6 to 7 min ).add sugar , Cardamon powder ,milk and let it cook till beetroot cooks nicely & starts living pan . Once done add dry fruits and off the gas.

Diwali special 
Ingredients :
Maida -2 cup
Ghee -1/4 cup 
Sugar -1 cup 
Coconut -1/2 cup 
Dry fruits -( raisins , cashews, pista, almonds)
Cardamon powder -1/4 spoon
Cocoa  powder -1 spoon 
Rawa -2 spoon 
Fig-3to 4

Method
Knead a dough using maida ,pinch salt , ghee,and water . Dough should b soft like chapathi . Keep it aside for 30 min 
For filling 
Fry rava in ghee  for 3 min , to same pan add coconut and fry for 3 min , now mix rava, coconut , dry fruits , figs ,cocoa powder , sugar powder , Cardamon powder . 
Now roll dough like puri and fill the fillings and fold it and deep fry till golden fry .

Chocolate cup cakes

Ingredients
For Cake 
All Purpose Flour (Maida) - 1/4cup 
Cocoa Powder - 1/4cup 
Powdered Sugar - 1/2 cup
Butter - 1/2 cup (50 gms)
Eggs - 3
Vanilla Essence - 1 tsp
Baking powder -1/4 spoon 
Baking soda little less then baking powder 
Nutrella (optional )
Method 

For the cake
1. Sieve together the all purpose flour (maida) and cocoa powder ,baking powder , baking soda in  a bowl.
2. Melt the butter in the microwave .
3. Beat the eggs in a bowl using a hand blender until it becomes very creamy and frothy.
4. Mix together all the wet ingredients (melted butter, sugar, vanilla essence) along with the beaten eggs.
5. Finally fold in the dry ingredients (flour + cocoa) with the wet ingredients.
6. Mix everything nicely with a wooden spoon until you get a smooth batter.
7. Grease a cup cake mould with butter and dust some flour and cocoa powder on it and keep it ready.
8. Pour the cake batter into the cup cake mould and bake it in a oven preheated to 350 degree F (180 C) for about 10 minutes.( it's better to check after 5 min sometime it takes less time to bake )
9. Check if the cake is done by inserting a toothpick in the middle of the cake. It should come out clean.
10.Switch off the oven and cool the cake before applying the syrup and frosting.
Once it cools down apply nuterella at top and some cherries or chocolate chips

Dates cake

Date Cake

Wonderfully moist, easy to make, delicious, soft and light date cake, with very little sugar due to the perfect natural sweetness of the dates, goes wonderfully with a hot cup of tea or coffee.

INGREDIENTS


1½ cup all-purpose/plain flour 
150 gm. chopped dates (de-seeded then weighed) (three-quarter cup)
1 cup of very hot water or milk (200ml)
1/2tsp. baking soda
1/2 spoon baking powder 

1 tsp. vanilla essence
2 tbsp. soft unsalted butter 
2 eggs
¼ cup sugar (50gm)
¼ cup crushed nuts (optional)

INSTRUCTIONS 

Put the chopped dates in a mixer add milk and make fine paste 

Grease a baking tray and keep aside

Sieve the flour & baking soda & baking powder together, then add the nuts into them if you are using. Toss together so that the nuts are well coated with flour.

Mix the sugar and butter in another bowl until creamy (you can use a machine or by hand), then add eggs and beat well until well combined. Add the vanilla and beat for a few more minutes. Now add the dates mixture and stir using a spatula or wooden spoon. Add the flours with the nuts, and fold into the mixture until well-combined.

Pour into the prepared pan, and bake in a preheated oven at 180C for about 40 minutes or until a skewer comes out clean.

Mixed vegetables Samber

Ingredients 
White pumpkin -1 cup
Potato -1 cup
Carrot -1 cup
Green chilly -3
Tomato -1
Onion -1
Toor Dal -1 cup 
Curry powder -4 spoon
Curry leaves
Mustard seeds
Red chilly -1
Garlic
Hing
Salt
Jaggery -1 lemon size
Lemon juice -2 spoon
Coriander leaf 
Method 
To a cooker add pumpkin , potato, carrot, tomato,onion,green chilly, toor dal   Cook for 4 whistle . 
When cooker cools down open and on the gas and add curry powder , hing , salt , jaggery. Cook 5 to 6 min . 
For tadka 
Add coconut oil , when hot add mustard , garlic , jeera, curry leaves, red chilly .
