PRAWNS MASALA WITH TWIST

PRAWNS MASALA WITH TWIST 
 This is very very tasty recipe , this is my version of recipe , jus tried it in my kitchen , and came out really yummy . 

Ingredients for marination 
Prawns 
Haldi
Salt
Pepper powder 1/2 spoon
Kasuri methi  1 spoon
Chilly flakes -1 spoon 
Ginger garlic paste -1 spoon 


Ingredients for gravy
Onion -2 finely chopped
Tomato - 1 finely chopped
Green chilly - 3 long sliced
Corn flour 1 spoon ( dissolve in water and make paste ) 
Soya sauce -1 spoon 
Garlic 3 to 4 cloves finely chopped
Butter
Ginger - garlic paste - 1 spoon 
Garam masala 1 spoon 
Shrimp broth ( I used knor ) -1 cube ( dissolve in water and make paste ) 
Schezwan sauce -2 spoon
Spring onion 
Coriender leaf 

  
Method 
Marinate prawns and keep 30 min 
In a kadai add butter , add garlic and sauté till golden brown , add onion fry till transparent then add ginger garlic paste , green chilly , spring onion , tomato , mix well till tomato become soft now add marinated prawns , shrimp broth mix well , cook for 5 to 10 min now add garam masala , Corn flour paste mix well finely add schezwan sauce , soya sauce , coriender leaf mix cook 2 min off the gas . 

Note : add salt only for marinating , at last stage off cooking check salt , if u need then only add .

Chicken kokum twist

Chicken kokum twist 
Chicken kokum twist is my own  version recipe :) and was hit 👍everyone liked in my home :) this recipe is indo - Chinese recipe ). 

Ingredients : 
Chicken ( I used leg piece and some bone less piece ) 
Curds (2 to 3 spoon )
Kokum syrup 3 spoon
Schezwan sauce - 2 spoon 
Soya sauce 2 spoon
Tomato ketchup -1 spoon
Pepper powder -1/2 spoon
Red chilly powder 1 spoon
Salt
Kasuri methi 1 spoon
Coriander  & pudina finely chopped 1/2 cup
Coriander  powder 1/4 spoon
Jeera powder a pinch 
Garam masala 1/2 spoon

 Method :
Mix all the above ingredients & Marinate above ingredients . 
Marinate 1 hr




In a pan add olive oil and put all the chicken pieces and fry till chicken cooks remove to a plate, to same pan add remaining mixture fry 2 min then mix fried chicken off the gas . Serve hot 


Kokum ice cream

Kokum ice cream :)
Kokum syrup is used to make juice commonly , here goes different method of using kokum syrup  is ice cream . Very delicious dessert . Serve this cream wid fresh fruits taste really awesome . Here goes the method 

Ingredients 
Milk - 1 ltr 
Sugar - 11/2 cup 
Badam and walnut (dry roast both & grind roughly in blender ) 
Kokum syrup -1/2 small cup 
Bread 1 single slice ( cut the sides)
Corn flour 3 spoon
 

Method : 
In blender add bread ,corn flour and 1/4 th milk and grind to fine paste keep aside . 
Boil 1 ltr milk and reduce to 1/2 by continuous stirring , when reduce to half add bread paste and mix  well nw add sugar mix well . Nw off the flame and let it cool to room temp . Nw add badam walnut powder mix it , add kokum syrup mix and freeze in fridge till ice cream sets . Nw serve wid some dry fruits and fresh fruits .

GOLI BAJE ( Mangalorian snack)

GOLI BAJE   
Goli baje is very known snack of mangalorian . 
Ingredients:
Maida -1 cup
Besan -2 to 3 spoon
Soda -1/2 spoon 
Banana -1 
Salt
Sugar-1 to 2 spoon
Green chilly -1 finely chopped
Ginger-1 inch. Finely chopped
Curry leaves - 1/4 cup finely chopped
Curds- 1/2 cup 
Hing -1/4 spoon 

Method : 

Smash banana and add all the ingredients mix well . Do a dough ( dough should not hard it shld b little watery type , u can c in the picture below.




Keep it 15 min or directly prepare by dropping small ball to oil , deep fry till golden brown.

PALAK DOSA

Palak dosa 
Palak dosa is very simple and healthy dosa . A small twist to normal dosa batter . If you hav dosa batter ready then u can do this dosa within a min . 

Ingredients : 
Dosa batter 2 cup 
Palak purée ( wash palak and put in boiling water and boil for some min don't close and boil , then cool it and put to a mixer to tat add 1 green chilly , inch ginger, make a paste ) 
Grated carrot 
Onion ( finely chopped ) 
Ghee
Cumin powder -1/2 spoon
Salt
 Method :
To normal dosa batter add salt cumin powder , palak purée , mix it well 



In a dosa pan spread little ghee and using a paper tissue rub full pan , then spread dosa batter on pan on tat put grated carrot , onion , put ghee to sides and middle and close the pan , when done serve hot wid coconut chutney .

BITTER-GOURD-MANCHURIAN

Karela manchurian (bitter-gourd-manchurian.)
This recipe is very tasty and healthy. Most of the people hate this specially kids . But this recipe everyone vil like it ,  Just try out . 
Ingredients 
Maida - 1/2 spoon
Rice flour-1/2 spoon 
Dry powders: 
1)Red chilly powder
2)Haldi
3)Garam masala 
4)Chat masala
5)Coriander powder
6)Pepper powder
7)Cumin powder
8)Amchur powder 
Salt
Sugar
Soya sauce 
Tomato ketchup 
Coriander leaf
Green chilly -2
Garlic -3 cloves
Ginger
Lemon juice
Onion -1 medium sliced 
Bitter gourd -2 
Ginger - garlic  paste 

Method :
Peel the outer part of karela and remove the seeds inside and cut round and soak in water along wid pinch salt and haldi keep 15 min.
Mix maida, rice flour, red chilly powder little salt and make a batter dip karela one by one and deep fry , fry till
Crispy remove and keep aside .
In a another pan heat 2 tbs of oil , add garlic ( finely chopped) fry till golden brown ,add ginger , green chilly( all finely chopped) fry for some time add ginger - garlic paste 1/2 spoon mix well add onion fry till golden brown now add all dry powders mix well if u need u can add 3 to 4 spoon water then mix finally add salt , sugar ( 1/2 spoon ) and all the sauce , mix it then add fried karela . Finally add coriander leaf and lemon juice ( 3 spoon) for garnishing. Serve hot

CARROT CAKE

Carrot cake
Ingredients
Dry ingredients:
Maida -1 1/2 cup 
Baking soda-1/4 spoon 
Baking powder-1/4 spoon
Salt -1/4 spoon
-------------------------------
Egg -2
Sugar -1 1/2 cup
Vanilla essence-1/2 spoon
Vegetable oil -1 cup
Cardamom powder -1/2 spoon
Grated carrot -2
Mixed fruits( tutty  fruty)
Walnuts
Raisins 
Milk ( if needed)



Method 
Mix all dry ingredients
In another bowl beat eggs to tat add sugar , oil , vanilla essence, beat well till fluffy.
To the tat add grated carrot , cardamom powder, raisins , walnuts, mixed fruits , finally add dry ingredients and fold the batter . To greased pan pour battle . Preheat oven for 15 min. Nw bake for 30 to 20 min till cake is done ( check cake by inserting fork if fork comes out neatly widout sticky then ur cake is done) . When cake is done let it cool then remove from vessel and do icing as u wish.

Brinjal fry

Brinjal fry
This recipe is very very easy recipe . Jus takes  15 min . 
Ingredients 
Brinjal - 2 (cut in round shape )
Salt
Red chilly powder
Rice flour - 2 spoon
Corn flour -1/2 spoon 
Haldi
Method : 
Mix all the ingredients ( do not add brinjal nw ) add little water and make a paste . Nw add brinjal mix well keep sometime then shallow fry . 


BABY CORN CHILLY

Baby corn chilly

Baby corn chilly very tasty and easy recipe tat u can include in ur lunch as side dish .
Ingredients :
Baby corn -10
Garlic finely chopped
Green chilly -2 finely chopped
Maida -1 spoon
Rice flour - 1 spoon
Corn flour - 1/2 spoon
Red chilly powder
Salt
Pepper powder
Coriander powder
Garam masala powder
Soya sauce 3 spoon
Tomato ketchup 2 spoon
Coriander leaf +pudina leaf -1 cup


Method :
Mix maida , rice flour, corn flour, red chilly powder, salt, pepper powder, coriander powder , garam masala powder add little water and make thick batter . Wash and dry baby corn and add to this mixture and keep 30 min
Then deep fry till golden brown .
Hw to make sauce
In a pan put 1spoon olive oil , ( u can add cooking also if olive oil not available in ur kitchen )then add garlic fry till golden , then add green chilly fry , add coriander leaf , pudina leaf, soya sause , tomato sauce , little pepper powder mix well then add fried baby corn , off the gas . Serve hot

Besibele bath

Besibele bath using electric rice cooker

Besibele bath a South Indian dish .small change I did is instead of cooking in normal cooker , I tried in electric rice cooker, v have different size rice cooker in market ,u may get small , big . I have big rice cooker soo tat v can cook for 3 persons . here goes the method :
Ingredients:
Rice-1 cup
Dal- 1/2 cup
Vegetables - carrot (1)potato(1)green peas , brinjal , mixed spourts , 1 cup cauliflower .
Onion -1
Coriender for garnishing
Raisins , cashews
Ghee
Mustard, jeera
Ginger garlic paste 1/2 spoon
Haldi, salt
Besi bele bath powder 2 to 3 spoon
Tamarind lemon size
Method
Soak rice and dal for 1 hr
In a electric cooker bowl on cook button add ghee when it is little hot
After ghee melt add mustard , jeera , later add onion cook for 5 min (close lid and cook) then add raisins , cashew , mix then add ginger garlic paste, mix then add all veggies mix and cook 5 min by closing lid . Then add rice tamarind juice (soak tamarind and use tat water) , besibele bath powder, haldi , salt . Add water I added 6 to 7 glass.mix well and close the lid . Once cooked cooker vil off automatically ( don't add less water )

Tomato rice

Tomato rice
This is my mom recipe , really tasty and very easy recipe . Here v can make 2 recipe , tomato rice & tomato juice.

Ingredients:
Tomato -4
Green chilly -3
Cashew
Raisins
Cooked rice
Ghee
Garlic finely chopped
Onion -2 long sliced
Method:
Cook rice keep aside.
Boil tomato in water ,cool and grind .
Drain tomato u vil get thick pulp use tat for rice ,( but don't waste remaining tomato juice u can serve by adding sugar to juice)
In a thick bottomed pan add ghee , garlic cook 1 min then add onion fry till golden brown , then add green chilly mix well. Add tomato pulp , salt mix well finally add rice ,mix well off the gas . Garnish wid fried dry fruits .


Dates kheer

Dates kheer very easy , simple recipe also taste soo Gud . This can be done within 30 min . I hope u vil enjoy this sweet dish . Thank u :)

Dates kheer
Ingredients
Dates (seedless)-1cup
Jaggery -1/4cup
Elachi-2to3
Coconut milk. 2cup
Milk-1cup
Badam (grind roughly )
Raisin
Cashew
Ghee

Method(1)
Keep aside few pieces of dates for garnishing and grind the rest to a smooth paste along with half the coconut milk, jaggery

Empty the paste into a heavy bottomed pan and bring to boil on the stove.
Add the remaining coconut milk, elaichi badam powder and boil well.
If the mixture is too thick, add milk and boil for some more time.
Adjust the sweetness according to your taste.
Remove from stove; garnish with the remaining date pieces and fried cashews ,raisin and serve hot.

Chicken Briyani

Chicken Briyani I prepared here is using ready Briyani masala and also I did small experiment by adding some extra items while marinating , soo tat Briyani taste really Gud. Second point is dum , I used non stick heavy bottom pan and layered gravy and rice and placed banana leaf at the top and closed cooked for 20 min in very low flame . U cane replace color powder by kesar, soak kesar in warm milk then add ,hope u all vil like it . Thank u
Chicken 1 kg
Teju briyani masala full packet
Ginger garlic paste1 spoon
Green chilly 4
Garam masala 1/2 spoon
Curds 1 cup
Haldi ( do not add salt to gravy Briyani masala contains salt )
Fried onions, ghee ( fried using ghee use Half for marinating other half for dum)
Garam masala
Pudina ( half for marninating other half for dum)
Coriender leaf ( half for marninating other half for dum)
Mix all the above ingredients and marinate for 30 min
Then cook rice by adding ghee and ( tie chakra, chake, black pepper , Briyani leaf in a cloth and add to rice ) cook rice keep aside
Now in a pan add chicken masala and cook till dry .

Then dum by adding little chicken gravy to non stick vessel on tat little rice ,color , fried onions , dry fruits, coriender and pudina do it 2 to 3 layers and dum in low flame for 20 min then serve hot.

Bread chat

Ingredients:serving 4 to 5
Bread cubes (bread slices cut into cube shape )
Lemon juice 2 spoon
Salt
Sugar -3 to 4 spoon
Curds 1 cup
Chat masala 1/2 spoon
Red chilly powder-1/2 spoon
Garam masala -1/3 spoon
Sev
Onion -4 ( small) finely sliced
Tomato 2 ( small) finely sliced
Coriender leaf
Pomegranate -1

Method:
Fry the bread cube till crispy . Keep aside
Mix onion ,tomato , lemon juice , pinch salt,Pomegranate .
In another bowl add curds , salt ,sugar , chaat masala, red chilly powder, garam masala powder.mix well
In serving plate put fried breads to tat add curds mixture, on tat add onion mixture , on tat garnish wid coriender leaf and sev . ( u can add fried peanuts )

Choco dates cake by steam method

Ingredients
Maida - 2 cup
Baking powder-1/4th spoon
Baking soda - pinch
Coco powder - 1/2 cup
Dates ( remove seeds)
Milk-1 cup
Vanila essence -1/2 spoon
Egg-2
Sugar 1 1/2 cup
Dry fruits ( mixed dry fruits grind roughly )
Butter - 1 cup

Method
Sieve the flour , cocopowder, baking powder, baking soda.
In another bowl .
Grind dates using milk and make paste .
Mix the sugar and butter until creamy (you can use a machine or by hand), then add the egg and mix until the egg is well combined. Add the vanilla and beat for a few more minutes. Now add the dates mixture and stir using a spatula or wooden spoon. Add the flours with the nuts, and fold into the mixture until well-combined.
Grease the bowl using oil ,sprinkle oil to bowl , then sprinkle some maida and pour cake batter . Place idli maker and boil water when water starts boiling keep the cake bowl and cook till cake is cooked ( check in between by fork , if it comes neatly widout any sticky then cake is cooked ,off the gas ) it takes around 30 min .
When it cools transfer it to plate and decorate as u wish .



HARA BHARA CHICKEN GRAVY

Ingredients:

chicken-1kg
coriander leaf-1 bunch
pudina leaf -1/2 bunch
green chilly -5
garam masala-1/2 spoon
red chilly powder -1 spoon
chicken masala -(u can put any masala like kundapur chicken masala or kabab masala or tandoori masala)-1/2 spoon
curds -3 spoon
onion-3 finely chopped
tomato -1
soya sauce -1 spoon
butter,oil
garlic finely chopped-1 spoon
ginger garlic paste-1 spoon
haldi,salt

hara bhara chicken gravy

METHOD:

Blend coriander leaf,pudina leaf,green chilly to fine paste.
In a pan add oil+butter then add garlic fry till golden then add onion fry till golden brown then add tomato,when tomato is half cooked add chicken,salt,haldi,soya sauce,ginger garlic paste,when chicken is half cooked add pudina paste mix well,when raw smells goes add curds,red chilly powder,garam masala,chicken masala,mix well.cook till gravy starts living pan. serve hot wid rotti


MIXED SPOURTS PULAO

Ingredients:(serves 4 )

Basmati rice-2 cup
onion-3 long sliced
pudina -1 cup
coriander leaf -1 cup
dry fruits -1/2 cup
green chilly 3 to 4
ghee
bay leaf-1
Cinnamon-1
Cloves-1
black pepper-2
Cardamom-1
carrot-1
potato-1
mixed sprouts-1 small cup
green peas-1 cup
ginger -garlic paste -1 spoon
jeera powder-1/4 spoon



METHOD:

Soak rice for 30min,grind pudina,coriander leaf and green chilly make a fine paste keep aside.
In a kadai add ghee add bay leaf.cinnamon,cloves,black pepper,cardamom,then add onion cook till golden brown,then add ginger garlic paste,add all veggies,sprouts,salt,jeera powder fry  for 5 min then add rice mix it,cook 3min add pudina paste mix well again cook 3min then add water  around 4 to 5 cup .let it cook in medium flame till rice is done .Garnish wid fried dry fruits and coriander leaf.serve wid raitha.



 

 

OATS UPMA

Ingredients:

oats -1 cup(i used Quaker oats)
onion -1 big finely chopped
green chilly -2( finely chopped)
ghee
sugar 4 spoon
salt
curry leaf
peanuts-1 cup
mustard - 1/2 spoon
grated coconut-1/4 cup

after adding water in kadai to upma









METHOD:
In a kadai add ghee temper wid mustard,peanuts,curry leaf when it start spluttering add onion, green chilly fry till transparent.then add oats mix well fry 2 min with continuous stirring,then add  coconut,salt ,sugar mix well add hot water 2 cup and stir well (don't allow to burn stir continuously)cook for few min till it become little dry ,off the gas .
