Badam barfi

Badam barfi
1)1 cup badam soaked in hot water 30 min 
2)1 cup milk 
3)Sugar-1/2 cup 
4)Ghee- 3 to 4 spoon 
5)1 Drop rose essence 
Method 
Grind badam milk and sugar , take a pan add ghee then add badam mix , rose essence mix nicely till dough then pour to greased plate and roll then cut and let it cool then store

Beetroot halwa

Ingredients 
Beetroot -3 to 4(peeled and grated ) 
Sugar -1/2 cup( according to ur taste )
Ghee -1/4 cup( or little less )
Cardamon powder -1/4 spoon
Milk -1/2 cup 
Dry fruits 
Method 
Fry beetroot with ghee till raw smell goes ( 6 to 7 min ).add sugar , Cardamon powder ,milk and let it cook till beetroot cooks nicely & starts living pan . Once done add dry fruits and off the gas.

Diwali special 
Ingredients :
Maida -2 cup
Ghee -1/4 cup 
Sugar -1 cup 
Coconut -1/2 cup 
Dry fruits -( raisins , cashews, pista, almonds)
Cardamon powder -1/4 spoon
Cocoa  powder -1 spoon 
Rawa -2 spoon

Method
Knead a dough using maida ,pinch salt , ghee,and water . Dough should b soft like chapathi . Keep it aside for 30 min 
For filling 
Fry rava in ghee  for 3 min , to same pan add coconut and fry for 3 min , now mix rava, coconut , dry fruits , figs ,cocoa powder , sugar powder , Cardamon powder . 
Now roll dough like puri and fill the fillings and fold it and deep fry till golden fry .

Chocolate cup cakes

Ingredients
For Cake 
All Purpose Flour (Maida) - 1/4cup 
Cocoa Powder - 1/4cup 
Powdered Sugar - 1/2 cup
Butter - 1/2 cup (50 gms)
Eggs - 3
Vanilla Essence - 1 tsp
Baking powder -1/4 spoon 
Baking soda little less then baking powder 
Nutrella (optional )
Method 

For the cake
1. Sieve together the all purpose flour (maida) and cocoa powder ,baking powder , baking soda in  a bowl.
2. Melt the butter in the microwave .
3. Beat the eggs in a bowl using a hand blender until it becomes very creamy and frothy.
4. Mix together all the wet ingredients (melted butter, sugar, vanilla essence) along with the beaten eggs.
5. Finally fold in the dry ingredients (flour + cocoa) with the wet ingredients.
6. Mix everything nicely with a wooden spoon until you get a smooth batter.
7. Grease a cup cake mould with butter and dust some flour and cocoa powder on it and keep it ready.
8. Pour the cake batter into the cup cake mould and bake it in a oven preheated to 350 degree F (180 C) for about 10 minutes.( it's better to check after 5 min sometime it takes less time to bake )
9. Check if the cake is done by inserting a toothpick in the middle of the cake. It should come out clean.
10.Switch off the oven and cool the cake before applying the syrup and frosting.
Once it cools down apply nuterella at top and some cherries or chocolate chips

Dates cake

Date Cake

Wonderfully moist, easy to make, delicious, soft and light date cake, with very little sugar due to the perfect natural sweetness of the dates, goes wonderfully with a hot cup of tea or coffee.

INGREDIENTS


1½ cup all-purpose/plain flour 
150 gm. chopped dates (de-seeded then weighed) (three-quarter cup)
1 cup of very hot water or milk (200ml)
1/2tsp. baking soda
1/2 spoon baking powder 

1 tsp. vanilla essence
2 tbsp. soft unsalted butter 
2 eggs
¼ cup sugar (50gm)
¼ cup crushed nuts (optional)

INSTRUCTIONS 

Put the chopped dates in a mixer add milk and make fine paste 

Grease a baking tray and keep aside

Sieve the flour & baking soda & baking powder together, then add the nuts into them if you are using. Toss together so that the nuts are well coated with flour.

Mix the sugar and butter in another bowl until creamy (you can use a machine or by hand), then add eggs and beat well until well combined. Add the vanilla and beat for a few more minutes. Now add the dates mixture and stir using a spatula or wooden spoon. Add the flours with the nuts, and fold into the mixture until well-combined.

Pour into the prepared pan, and bake in a preheated oven at 180C for about 40 minutes or until a skewer comes out clean.

Mixed vegetables Samber

Ingredients 
White pumpkin -1 cup
Potato -1 cup
Carrot -1 cup
Green chilly -3
Tomato -1
Onion -1
Toor Dal -1 cup 
Curry powder -4 spoon
Curry leaves
Mustard seeds
Red chilly -1
Garlic
Hing
Salt
Jaggery -1 lemon size
Lemon juice -2 spoon
Coriander leaf 
Method 
To a cooker add pumpkin , potato, carrot, tomato,onion,green chilly, toor dal   Cook for 4 whistle . 
When cooker cools down open and on the gas and add curry powder , hing , salt , jaggery. Cook 5 to 6 min . 
For tadka 
Add coconut oil , when hot add mustard , garlic , jeera, curry leaves, red chilly .

Palak & dil leaves moong dal

Ingredients
Palak -1/2cup
Methi leaves -1/2 cup
Dil leaves -1/2 cup 
Moong dal-1 cup
Green chilly -4
Onion -1
Tomato-1
Haldi
Salt
For seasoning 
Mustard seeds
Curry leaves
Red chilly -2
Crushed Garlic -3 
Hing
Method 
To a cooker add oil when hot add mustard , curry leaves , red chilly ,crushed garlic , hing , add onion fry till transperant , add ginger paste , tomato , green chilly mix well cook 2 min then add moong dal , mix well add water to cook dal  and give 3 to 4 whistle . When cool remove whistle and add salt if required add water and cook for 5 min . Then serve hot .


Chicken lollipop

Ingredients 
Chicken 
Schezwan sauce -1 spoon
Maida -4 spoon
Corn flour -2 spoon
Salt
Color powder
Haldi
Pepper powder-1/2 spoon
Red hilly powder-1 spoon
Soya sauce -1 spoon
Egg
Chilly sauce -1 spoon
Tomato sauce -1 spoon
Aluminum foil 
Method 
Beat egg in a bowl and mix all ingredients . Marinate chicken for -15 min then deep fry till golden brown . 
In a pan add 2 spoon olive oil to tat add finely chopped garlic , ginger , green chilly and fry 1 min add coriander leaf , schezwan sauce , soya sauce , chilly sauce , tomato sauce and mix well off the gas , now roll fried chicken in tat gravy and roll aluminum foil to chicken and garnish in a plate .

Chicken popcorns

Ingredients 
Boneless chicken cut into small pieces 
Red chilly powder
Haldi
Salt 
( marinate all above  items and keep aside ) 
Maida-1/2 cup
Salt
Chilly powder-1 spoon
Curry powder-1/2 spoon
Paprika powder -1/2 spoon
Pepper powder -1/2 spoon
Egg -1 
Milk -1/2 glass
Bread crumbs -1 cup
Method 
Mix maida , salt , chilly powder , curry powder , paprika powder ,pepper powder.
In another bowl mix egg and milk 
In another bowl take bread crumbs
Now take chicken pieces roll in maida mix then roll in egg mix , again roll in maida mix then roll in egg mix now roll on  bread crumbs and deep fry . Fry till golden brown and serve hot with sauce .

Chocolates

Chocolates 
This recipe I learnt from one post in FB . Soo tried and posted here . Very tasty and easy recipe can be done within 10 min 
Ingredients 
Cocoa powder -2 spoon
Marie biscuit - 1 pack 
Butter -2 spoon 
Sweetened Condensed milk -1/4 tin (1/2 cup )
Method 
Crumble 2 packs of Marie biscuits in a mixer to powder.. Add 2 tbsp of cocoa powder, 1/2 tin Sweetened condensed milk U can increase the sweetness depending on your taste.. Add 1 tbsp butter and knead well.. Grease hands with butter and make small balls... Or give any desired shape i had the  heart shape mould so i  gave that shape...now refrigerate for 1/2 hr .

EGG MASALA

Egg masala 
Ingredients 
Boiled egg -4( cut into half)
Onion -2 finely chopped
Tomato -1 finely chopped
Coriander leaf
Garlic - 3 finely chopped
Schezwan sauces -2 spoon
Tomato sauce -2 spoon
Soya sauce -1 spoon
Red chilly powder 1 spoon
Chilly flakes -1/2 spoon 
Coriander powder -1 spoon
Jeera powder -1 spoon
Black pepper powder -1/2 spoon
Garam masala powder -1 spoon
Kasuri methi -1 spoon
Amchur powder -1/2 spoon
ginger garlic paste -1 spoon
Olive oil 

Method 
Add olive oil to pan , when hot add garlic fry till golden ,add onion fry till golden brown , add ginger garlic paste , tomato fry till tomato becomes soft now add schezwan sauce mix well add chilly flakes , and all dry powders , kasuri methi , mix and add 1/2 glass water and cook 5 min now add tomato and soya sauce mix well now add boiled half eggs to gravy , off the gas and garnish with coriander leaf .

Fruit cake

Fruit cake  by steam method 
This  cake is done on my hubby bday .it was his surprise bday cake & he loved it.

Ingredients for cake 
Maida -1 1/2 cup
Baking soda-1 spoon
Baking powder -1 spoon

Egg-3
Sugar -1 cup
Butter -1 cup
Strawberries +kiwi+mango purée ( grind all three to a paste ) 
Vanilla extracts -1 spoon
Pineapple juice -2 to 3 spoon 

Sieve maida , baking powder ,baking soda . 
In another bowl beat butter , sugar till fluffy . Add eggs & beat again now add fruit purée mix well , add maida mix slowly and mix well till smooth batter .
Take a baking / steaming cake bowl  sprinkle oil, maida pour cake batter to bowl , tap bowl once slowly . 
In a cooker take some water place steamer stand ,when it starts boiling place cake bowl ,cook till cake is done . Check in a fork by inserting fork into cake if fork comes out clean without sticking then cake is done .

Remove cake and place on a plate , let it cool fully. Now cut into half . Sprinkle pineapple juice to both cakes .Apply frosting cream on half piece cake now place another half cake on it. Apply frosting and decorate using fruits 

For frosting 
Whipping cream -1 cup
Icing sugar -1 cup 
Beat both the ingredients till soft . And decorate as u wish using pipping .
Decorate wid strawberry , kiwi, mango, cherry,

Masaru dosa ( yogurt dosa)

Ingredients
Yogurt -1 cup
Salt
Grated coconut -1/2 cup
Rice -3 cup
Method : 
Soak rice for 30 min ( without soaking u can do)
In a blender add all items and grind to a smooth batter . 
To a pan apply oil ,add 1 scoop batter ( do not  spread more only little at centre )cover and fry both or only one side .apply ghee on dosa and sprinkle some sugar on that dosa and serve hot .

Ingredients for green chutney 
Pudina -1/2 bunch
Coriander leaf -1/2 bunch
Ginger 
Sugar -1 spoon
Salt
Lemon -1( lemon juice ) 
Green chilly -1
Method 
Grind all ingredients to fine paste

Gobi manchurian

Ingredients
Gobi 
Haldi
Corn flour ( u can add ready gobi manchurian powder instead of 'maida , corn flour ) 
Maida
Onion finely chopped
Ginger finely  chopped
Soya sause
Tomato ketchup 
Chilly sause
Red chilly powder 1/2 spoon
Garam masala 1/4 spoon 
Color powder 
Green chilly finely  chopped 
Method 
Wash gobi and cook for 5 min in water add pinch haldi and salt to tat . Nw remove gobi  from water and pat to dry . In bowl add maida 1 spoon and corn flour water salt , little redchilly and make paste dip gobi and deep fry till golden fry . And keep aside 
In a pan add oil and add garlic and ginger cook till golden then add onion  fry till golden brown add green chilly then add red chilly powder gram masala powder add little salt and sugar and jus 2 spoon water cook 2 min then add all sause mix it we'll add color powder finally add fried gobi mix it garnish wid coriender leaf and spring onion serve. Hot

Ingredients for patties
Boiled and grated Potato -1
Boiled and mashed Carrot -1 
boiled and mashed green peas -1 bowl

Coriander leaf -2 spoon
Corn flour -3 spoon
Bread crumbs -1 cup 
Amchur powder -1 spoon
Red chilly powder -1/2 spoon
Pepper powder -1/2 spoon
Jeera powder -1/4 spoon
Chat masala -1/2 spoon
Garam masala -1/4 spoon
 Ginger garlic paste -1/2 spoon
 Salt 
Haldi
Method 
Mix all veggies and masala powders , corn flour ,1/2 cup bread crumbs , mix well knead to dough and make a round shape and roll into bread crumbs and deep fry or shallow fry . 
  
Method 
Grind all ingredients to fine paste .

Cucumber sliced round 
Grated carrot

Method 
Cut bun to half and apply chutney to one side on tat apply tomato ketchup , keep tomato , cucumber , grated carrot ,place patties on tat grate cheese and place other half bun on that . Serve

Bread crumbs -1 cup

Method 
Mix all veggies and masala powders , corn flour ,1/2 cup bread crumbs , mix well knead to dough and make a desire shape and roll into bread crumbs and deep fry or shallow fry . Serve with green chutney and ketchup .

Samosa

Ingredients for dough

Maida -1 cup
Chapathi atta-1 cup
Sesame seeds -1/2 spoon 
Salt
Turmeric -1/4 spoon
Ghee -2 spoon 
Water
Saunf-1/2 spoon
Jeera -1/2 spoon


Ingredients for stuffing 
Boiled and mashed potato -2
Kasuri methi -1 spoon
Jeera -1/2 spoon
Saunf -1/2 spoon
Oil-2 spoon
Ginger - garlic paste -1 spoon 
Red chilly powder -1/2 spoon
Pepper powder -1/4 spoon
Amchur powder -1 spoon 
Jeera powder -1/4 spoon
Coriander  powder -1/4 spoon
Chat masala -1/4 spoon
Garam masala -1/2 spoon
Coriander leaf 

Knead dough using above ingredients , dough should be stiff . Keep aside for 10 min 

In a pan add oil , when hot add jeera , saunf , ginger - garlic paste , mix well add mashed potato , add all dry powders , kasuri methi ,coriander leaf , cook 5 min and off the flame . 
Make a thin 5" diam. round with some dough.
Cut into two halves. Run a moist finger along diameter.
Join and press together to make a cone.
Place a tbsp. of filling in the cone and seal third side as above.
Make five to six. Put in hot oil, deep fry on low to medium till light brown.
Do not fry on high, or the samosas will turn out oily and soggy.
Drain on rack or kitchen paper.
Serve hot with tomato ketchup




 

Kande pohe

Ingredients 
Poha -1 bowl
Onion -1 finely chopped
Curry leaves 
Mustard seeds -1/2 spoon
Jeera -1/2 spoon
Ghee
Red chilly -2
Green chilly -2
Peanuts
Lemon juice -1 spoon
Grated coconut -1/4 cup
Salt 
Sugar -2 spoon
Turmeric


Method :
Wash poha , drain and keep aside 
Add ghee to pan ,when hot add mustard , jeera , red chilly , curry leaves , peanuts,add onion till soft , add green chilly ,  salt , turmeric , coconut ,sugar  mix well add poha mix it cook for 3 min,add lemon juice . Serve hot

Pudina pulao

Ingredients:
Basmati rice -2 cup 
Vegetables cooked ( carrot,green peas , potato ) 
Pudina-1 cup 
Coriander leaf -1 cup 
Green chilly -5 
Carrot -2
Green peas -1 cup
Potato -1
Ghee 
Dry fruits
Bay leaf
Saunf -1/2 spoon
Ginger -garlic paste 

Method 
Grind green chilly ,pudina,coriander leaf ginger garlic paste ,into fine paste .keep aside
Wash and soak rice for 15 min 
In a vessel add ghee when hot add bay leaf , saunf , now add vegetable fry for sometime , add turmeric ,salt , mix it . Now add pudina paste , mix well . Add rice mix well add water (4 cup ) .after rice done garnish with fried dry fruits & coriander leaf .

Carrot paratha

A healthy & tasty recipe . 
Ingredients for dough 
Chapathi atta- 2 cup
Water -1 cup 
Salt
Jeera -1/2 spoon
Haldi -1/4 spoon 
Ingredients for stuffing 
Grated carrot -1 cup
Sugar -2 spoon
Coriander leaf -1/4 cup
Pepper powder -1/4 spoon
Red chilly powder -1/4 spoon
Salt 
Jeera powder -1/4 spoon
Garam masala -1/4 spoon
Amchur powder -1/4 spoon 
Oil -3 spoon

Method 
Knead dough like chapathi using above ingredients and keep aside for 30min .
In a pan add oil when it is hot add carrot & remaining ingredients , fry till dry . Off the gas and add coriander leaf . 
Roll chapathi round and add filling to that , again fold and roll round like chapathi . Fry in ghee till golden .  Serve with sweet curds ( curds + sugar )

Spinach & dil leaves egg fried rice

This is very simple and healthy easy recipe ,kids will love this .

Ingredients :(for 4 ppl)
Cooked rice ( u can use left over rice ) 
Egg-3
Onion-2
Soya sauce - 4 spoon
Tomato ketchup -1 spoon
Lemon-1 or vinegar 
Cooked Green peas -1/2 cup
Pepper powder -1 spoon
Red chilly powder -1/2 spoon
Salt
Ginger - garlic paste 
Butter -1 spoon
Oil
Green chilly -2
Spinach -1cup
Dil leaves -1cup


Method 
Cook rice and keep in fridge for 1 hr 
In a thick bottom pan add oil + butter , when it is hot add onion sauté for 2 min add ginger garlic paste , green chilly,green peas  mix well add pepper powder ,red chilly powder, soya sauce, tomato ketchup , salt ,lemon juice, break eggs and mix it well add rice , spinach and dil leaves , mix well and cook 5 min . Serve hot with  ketchup or any manchurian .

Bread ras malai

This recipe is really easy , fast , delicious dessert . My 3 year son love this . I have added lots of dry fruits  in this recipe. 
Ingredients 
Bread slice -5
Dry fruits - ( cashew nuts , raisins , badam ,pista, ) for garnishing fry in little ghee and make small pieces 
Dry fruits - ( cashew nuts , badam ,pista, walnuts ) fry in little ghee and make powder 
Milk -2 bowl 
Sugar -1 1/2 cup
Cardamon powder 1 spoon 
Kesar 1/2 spoon 

Method 
Dip  bread slice in water and make small   round balls ( u can make  2 balls using 1 bread) 
Then shallow fry all balls in ghee , keep aside 
In a pan boil milk , sugar ,reduce to half then add dry fruits powder mix it well when it becomes thick off the flame and add bread balls ,garnish with dry fruits , kesar .keep in refrigerator for some time serve cold .

RAVA LADOO

Ingredients :
Rava -1 bowl (semolina )
Coconut -1/2 cup
Sugar -3/4 cup
Cardamon powder 1 spoon
Dry fruits 
Milk -3 spoon
Ghee 

Method:
In a nonstick pan add ghee and fry dry fruits & keep aside .
To same pan add rava fry till nice aroma comes ( do not burn be careful ) & keep aside , to same pan add coconut fry sometime add sugar , Cardamon , mix and fry 5 min finally add rava , dry fruits Off the flame ,add milk let it cool , nw start making ladoo .

Stuffed & roasted baingan gravy(eggplant)

Ingredients for stuffing 
Coriander leaf 1/2 bunch & little for garnishing 
Green chilly 2
Ginger  - garlic paste. -1 spoon
Coconut 
Coriander seeds -1 spoon
Jeera -1/2 spoon
Methi -1/4 spoon 
Red chilly 2
Haldi 
Salt
Roasted gram -3 spoon 
Coconut oil 
Onion-1/2 
Garam masala-1/2 spoon

Method got stuffing 
In a pan add 2 spoon coconut oil and fry coriander seeds till nice aroma comes then add jeera , methi  , red chilly, fry 1 min then add roasted gram ,fry for sometime then add coconut fry till coconut becomes dry . Cool it & add to blender along with coriander leaf , green chilly  , ginger garlic paste , salt , onion ,haldi , garam masala grind and make thick paste . Do not add water while grinding ( if u feel u want to add water add jus 3 spoon water not more then tat ) 

Now take a baingan and cut in one side and make a hole and apply oil for outer surface and fill the stuffing . Keep remaining  stuffing for making gravy.

In a gas roast a baingan and keep aside 
Note : u can roast directly in gas or can use pan . 

Ingredients for gravy 
Onion -1 finely chopped
Tomato -1finely chopped
Remaining stuffing mixture
Sugar 1/2 spoon
Lemon 1/2 
 

In a kadai add little oil and add onion
Fry till golden brown , add tomato cook till it becomes soft then add stuffing mixture , add water sugar mix it well if u want u can add salt . When gravy becomes thick add stuffed roasted baingan mix & off the flame . Add coriander leaf for garnishing .  

Note : after roasting baingan cool it and carefully  remove outer burnt surface ,then add to gravy .
