Maida -1 cup
Chapathi atta-1 cup
Sesame seeds -1/2 spoon 
Salt
Turmeric -1/4 spoon
Ghee -2 spoon 
Water
Saunf-1/2 spoon
Jeera -1/2 spoon
Ingredients for stuffing 
Boiled and mashed potato -2
Kasuri methi -1 spoon
Jeera -1/2 spoon
Saunf -1/2 spoon
Oil-2 spoon
Ginger - garlic paste -1 spoon 
Red chilly powder -1/2 spoon
Pepper powder -1/4 spoon
Amchur powder -1 spoon 
Jeera powder -1/4 spoon
Coriander  powder -1/4 spoon
Chat masala -1/4 spoon
Garam masala -1/2 spoon
Coriander leaf 
Knead dough using above ingredients , dough should be stiff . Keep aside for 10 min 
In a pan add oil , when hot add jeera , saunf , ginger - garlic paste , mix well add mashed potato , add all dry powders , kasuri methi ,coriander leaf , cook 5 min and off the flame . 
Make a thin 5" diam. round with some dough.
Cut into two halves. Run a moist finger along diameter.
Join and press together to make a cone.
Place a tbsp. of filling in the cone and seal third side as above.
Make five to six. Put in hot oil, deep fry on low to medium till light brown.
Do not fry on high, or the samosas will turn out oily and soggy.
Drain on rack or kitchen paper.
Serve hot with tomato ketchup
